ZUCCHINI Season!

If you are blessed with an abundance of zucchini from your own garden or know a friend who is blessed and trying to share with anyone who will take some, this is a great recipe. :) It combines zucchini and chocolate, and it uses 2 cups of shredded zucchini in each batch, producing 2 loaves that will go fast and be loved when given. This also freezes well to have on hand for spontaneous hospitality. ENJOY!

Chocolate Zucchini Bread (2 loaves)

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 1 T. vanilla
  • 2 c. shredded zucchini (skin and seeds, included)
  • 2 1/2 c. flour
  • 1/2 c. cocoa for baking
  • 1 t. salt
  • 1 t. baking soda
  • 1 t. cinnamon
  • 1/4 t. baking powder

Beat the first 4 ingredients . Stir in zucchini. Combine dry ingredients and mix it well with the zucchini mixture. Pour into 2 greased loaf pans. Bake at 350 degrees for one hour.

I have to admit that I also like to toss in about a cup of chocolate chips. More chocolate makes it better, right? :)
