Tasty Tuesday - Ritz Breakfast Cups 4 School

This morning we are welcoming Official School Day #2. :) I made french toast for the first day, but one student was too full of school jitters to eat and opted for a small bowl of cereal, while the other really enjoyed the warm breakfast. It's so easy for us to fall into bad habits with breakfast, since it usually feels rushed, and I'm not 100% awake until after 8 ... okay, 9. :)

I'm about to make a master list of things to keep on hand for good breakfasts, so what would you put on your list? I like things that are healthy, might be easy to take "in hand" if needed, aren't too expensive, and will give enough energy to get through the morning. What should go on such a list? I'd love to hear your ideas.


I first shared this recipe over a year ago, but it's a favorite. They're fun to make, great to freeze, easy to pick up and take, and not too expensive. It's only "con" is that it might stick a little in the pan, so spray generously. Everyone loves this recipe I made up for Ritz Breakfast Cups.

Ritz Breakfast Cups

Turn your oven on to 350 degrees and spray a muffin tin generously with cooking spray. Put one Ritz cracker in the bottom of each hole.


Thinly slice a roma tomato and dice 1/2 a green pepper (Optional - ask the fam). Put one tomato slice and a sprinkling of green pepper on top of each cracker.






If you want more protein you can now toss in some bacon bits (To keep it healthy use turkey bacon), cooked sausage bits, or the rest of the ham lunchmeat no one wants. :) Sprinkle with grated cheese. I like colby jack, but you can spice it up or keep it simple, based on what the hungry morning people at your house like.








Sprinkle a little salt and pepper over each. With a whisk mix one egg and one tablespoon of milk PER 2 MUFFIN CUPS.




Pop it into the oven for 20 minutes. Let it rest on the stovetop for about 5 minutes before taking a knife around the edge of each cup. Remove onto a plate and serve. These are easy to just pick up and take with you, but send a napkin, or someone will be wiping "breakfast cup" on their jeans.

Ok, we're not too creative, but we like mini-bagels (wheat are good) with Nutella (not to healthy, but yummy), tortillas with shredded cheese (melted in microwave), boiled eggs, canadian bacon, instant oatmeal in a mug with a side of a tablespoon of peanut butter (take a bit of peanut butter then get some oatmeal on your spoon - yummo mixture - I also add one packet of Splenda).  We also like yogurt and Kashi granola bars.  Anthony's idea of the perfect breakfast is either choco. poptarts or CocoaPuffs cereal but sad to say, he rarely gets this!!!!!!!!  Thanks for your recipe, I'll try it soon!  Love U, Jenny
