I made an apple cake last weekend to share with friends after the football game near my college reunion. After a chilly night of football, this cake was a great way to cap off an evening. I hope you'll enjoy it too!
Apple Cake
- 2 c. apples
- 3 T. sugar
- 1 t. cinnamon
- 2 c. sugar
- 1 c. oil
- 4 eggs
- 1/4 c. orange juice
- 2 t. vanilla
- 3 c. flour
- 1 T. baking powder
- 1/2 t. salt
Pour 1/3 of the batter into a greased bundt pan, Spread 1/2 of the apples over the batter. Pour another 1/3 of the batter over the apples and then the rest of the apples. Finish by pouring the last 1/3 of the batter over the apples.
Bake for 60 minutes at 325 degrees; test it for doneness with a cake tester. Cool about 10 minutes in the pan before turning it out onto a rack or serving plate to continue cooling. Before serving, sprinkle with confectioners sugar.

Oh how yummy, Julie!!! Do you think this would work for someone who is diabetic? I would love to make it but don't want to tempt my hubby if he can't eat it. I am new at cooking the diabetic way and wasn't sure about it.

That cake looks really good! It's pretty with the powdered sugar sprinkled on it, too!
