Tasty Tuesday ... Apple Cake

 Fresh Apple Cake is a fall standard at our house. The house smells amazing while the cake is baking, it feeds a lot of people, and it makes a great "next day" treat.  I really love it served with a little whipped cream or vanilla ice cream. Or ... for those who live in my hometown, Hilton Head Ice Cream makes a cinnamon ice cream that would be heavenly on this cake. I made an apple cake last weekend to share with friends after the football game near my college reunion. After a chilly night of football, this cake was a great way to cap off an evening. I hope you'll enjoy it too!



Apple Cake
  • 2 c. apples
  • 3 T. sugar
  • 1 t. cinnamon
  • 2 c. sugar
  • 1 c. oil
  • 4 eggs
  • 1/4 c. orange juice
  • 2 t. vanilla
  • 3 c. flour
  • 1 T. baking powder
  • 1/2 t. salt

Peel and chop apples into small pieces. Mix with sugar and cinnamon. Set them aside. In a large bowl, mix 2 c. sugar and oil. Add eggs, juice, vanilla. Add the dry ingredients and mix well until smooth.


Pour 1/3 of the batter into a greased bundt pan, Spread 1/2 of the apples over the batter. Pour another 1/3 of the batter over the apples and then the rest of the apples. Finish by pouring the last 1/3 of the batter over the apples.








Bake for 60 minutes at 325 degrees; test it for doneness with a cake tester. Cool about 10 minutes in the pan before turning it out onto a rack or serving plate to continue cooling. Before serving, sprinkle with confectioners sugar.

Oh how yummy, Julie!!! Do you think this would work for someone who is diabetic? I would love to make it but don't want to tempt my hubby if he can't eat it. I am new at cooking the diabetic way and wasn't sure about it.

That cake looks really good! It's pretty with the powdered sugar sprinkled on it, too!
