Did you get a sample recipe in the mail from Kroger last week? For Pumpkin Turkey Chili? Me too! Well, I had just gotten a similar recipe from a girlfriend, so I decided to blend them and try a pot. We served it over corn chips, with shredded cheese and sour cream on top. With a glass of cold apple cider on the porch, this recipe was a great October afternoon meal! I hope you'll enjoy it. Here's my version:
Pumpkin Petros
1 T. oil
1/2 c. chopped onion
1/2 c. chopped red pepper
1/2 c. chopped yellow pepper
1 clove of garlic, minced
1 lb. ground turkey
1 can (14.5) oz diced tomatoes
1 can (15 oz) pumpkin puree
2 c. beef broth
1 1/2 T. chili powder
1/2 t. black pepper
1/2 t. cinnamon
1/4 t. salt
1/2 c. shredded cheese blend
sour cream
Saute the onion, peppers, and garlic in the oil til soft. Beautiful!
Stir in and brown the turkey with the veggies. Mix in Tomatoes, pumpkin, spices, and beef broth. Stir well and simmer over medium heat for about 30 minutes.
Serve over corn chips and top with cheese and sour cream. (Serves 4 teens/adults)
Pour apple cider and invite your kids out to the front porch ... they'll come and sit and chat. Chili's good like that. ;)
